The Forum: Go 'nuts' with crunchy muffins

It's been quite a while since we made any muffins around here, so let's get right to it, with the following pair of almost identical, yet different, possibilities two Forum cooks fired off in response to a request from Linda Happy.

Dixie White up there in Darrington starts us off, mentioning, "I found this Grape-Nuts-orange muffin recipe right away as I've had it in my old 'Better Homes and Gardens Cookbook.'"

And Carol Wilson of Everett tells us, "This recipe for the Grape-Nuts-orange muffins from recipes@cooks.com looks like the one Linda Happy is looking for. It sure looks good."

Grape-Nuts-orange muffins



1/4 cup shortening



1/3 cup sugar



2 eggs, well beaten



2 cups sifted flour



1/2 teaspoon salt



1/2 teaspoon baking soda



1 cup orange juice or 3/4 cup orange juice and 1/4 cup water



1 tablespoon grated orange peel



1 cup Grape-Nuts



Preheat oven to 400 degrees.

Thoroughly cream shortening and sugar; add eggs and beat well. Sift flour with salt and baking soda; add alternately with orange juice and orange peel to creamed mixture. Stir in Grape-Nuts.

Fill greased muffin pans 2/3 full and bake 20 to 25 minutes.

Makes 1 dozen.

Grape-Nuts-orange muffins



2 cups flour



1/3 cup sugar



1 teaspoon baking powder



1/2 teaspoon salt



1/2 teaspoon baking soda



1 cup Grape-Nuts



2 eggs, beaten



1 cup orange juice



1 tablespoon grated orange peel



1/3 cup shortening, melted

Preheat oven to 400 degrees. Sift together the flour, sugar, baking powder, salt and baking soda; stir in Grape-Nuts. Combine the eggs, orange juice and orange peel; add melted shortening. Add egg mixture to the dry ingredients, stirring only until moistened.

Spoon into 12 muffin pans and bake for 20 to 25 minutes.

Makes 12.
