Readers share Asian-themed dishes

Forum cooks have been busy supplying recipes for Chinese barbecued pork to keep Gracie Dinsmore and her family back there in Missouri from Asian-food starvation.
Well, today Jim Burns of Mukilteo shares a pair of recipes to help Gracie add to the meal.
"We were married in Honolulu in 1953,'' he writes.
"We picked up a little cookbook of favorite island recipes while there. Here are two we really like.''
Fried rice
3/4 cup diced Spam or any leftover cooked meat or shrimp
1 small onion, diced
2 tablespoons oil
1/2 green or red bell pepper, diced
1 rib celery, diced
2 mushrooms, sliced
2-3 cups cooked rice
1/2 cup peas
2 tablespoons soy sauce
1 egg, beaten

Fry Spam, leftover meat or shimp and onion lightly in the oil. Add bell pepper, celery, mushrooms, rice, peas and soy sauce. Cook over low heat for 8 to 10 minutes. Add egg and cook for 5 minutes, stirring frequently. Serve immediately.
Waikiki French toastwich
1 can tuna, drained and flaked
3 tablespoons mayonnaise
2 scallions, chopped
1 rib celery, diced
2 teaspoons lemon juice
8 slices bread, divided
2 eggs, beaten
2 tablespoons milk
2 teaspoons soy sauce
Chunk of butter for frying

Mix tuna, mayonnaise, scallions, celery and lemon juice together and spread on 4 slices of the bread. Top with remaining 4 slices bread.
Stir together the eggs, milk and soy sauce, mixing well. Dip both sides of sandwiches in batter and brown both sides in butter in a skillet.
