Homemade pumpkin spice hottie
1cup pumpkin puree (homemade or canned)
1quart low-fat milk
1/4cup light brown sugar
1-2 teaspoons pumpkin pie spice, to taste and for sprinkling
1-2 teaspoons pure vanilla extract
Combine pumpkin, milk, sugar, spices and vanilla in a large pan over medium heat. Use an immersion blender or a wire whisk to blend. Heat until liquid simmers, but don’t allow to boil. Top each serving with whipped cream if desired and sprinkle with spices. Makes 4 servings, more for little kids, fewer for adults. For a latte-like drink, add to prepared hot coffee. Leftovers can be refrigerated for up to a week.
