Make these bubbly cocktails for New Year’s Eve

It’s New Year’s Eve and that means it’s time to break out the bubbly.

And just like New Year’s is better with friends and loved ones around, champagne is even better with some friends.

So break out the pretty glasses, say goodbye to 2014, and welcome 2015 in style.

Here’s a look at five great cocktails — two from the book “Death and Co.: Modern Classic Cocktails” — that go great with champagne or sparkling wine.

Mig Royale

  • 1 ounce Plymouth gin
  • 3/4 ounce Cointreau
  • 1/2 ounce Luxardo maraschino liqueur
  • 1/2 ounce lemon juice
  • dry champagne

Shake all the ingredients (except the champagne) with ice, then strain into a coupe. Top with champagne. No garnish.

North by Northwest

  • 1 1/2 ounces Aviation gin
  • 1/4 ounce St. George absinthe
  • 3/4 ounce lemon juice
  • 3/4 ounce simple syrup
  • dry champagne

Shake all the ingredients (except the champagne) with ice, then strain into a flute. Top with champagne. No garnish.

Champagne limoncello cocktail

  • 1/2 ounce limoncello
  • 1/2 teaspoon lemon juice
  • Brut champagne
  • lemon rind, in long strips

Roll up lemon rind and place at bottom of cocktail flute. Add limoncello and juice. Top up with champagne.

Elderflower winter cocktail

  • 1 ounce St. Germain
  • 3 ounces champagne
  • lemon garnish

Pour St. Germain into cocktail flute. Top up with champagne and garnish with orange.

Ruby spice bubbles

  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • Pinch ground cloves
  • 1/4 teaspoon ground dry ginger
  • 3 tablespoons water
  • 4 ounces unsweetened cranberry juice, chilled
  • 750-milliliter bottle sparkling white wine, chilled
  • Brandied or candied cherries

In a microwave-safe bowl or glass, combine the sugar, cinnamon, cloves, ginger and water. Stir well, then microwave on high for 1 to 2 minutes, or until the sugar is completely dissolved. Set aside to cool completely.

In a cocktail shaker, combine the cooled spice syrup with the cranberry juice. Shake to combine, then divide between 4 cocktail flutes or coupe glasses. Top each with sparkling wine and add 1 cherry to each.
